We just decided to have a superbowl party at our house. So far the people we have invited have offered to bring (and im including the stuff I have as well) : pierogies (a favorite of all the guests) 7 layer dip, spinach dip, chips and salsa (seems like a lot of dip, but the spinach one is gluten free for one guest) pigs in a blanket, meatballs, fruit and cheese and cookies and cupcakes.
I feel like we need some more meet, but several of the people do not eat meat. I was also thinking of doing veggies, but last time no one ate them at all. Also we are having about 15 people. Do you think its enough food and enough variety?

I think a veggie tray is always a good add. Even if it doesn't get eaten, it's good to have.
Maybe a baked chicken wings or pizza bites?
I like the wings idea. You can even just throw in the crockpot.
I'd probably still do a veg tray. It doesn't need to be big or elaborate or anything, but it's always nice to have a healthier option.

Maybe there's a way to add veggies/healthy option without doing a veggie platter--maybe a salad or a thin crust pizza loaded with veggies? A mix of roasted veggies sprinkled with goat cheese?

For more veggies: you could do a thin crust pizza (or when I make them for myself - a whole pita), spread it with hummus, and throw some tomatoes, red and yellow peppers, and other veggies and bake it for however long the crust needs to cook. You could also throw some cheese on it.
(Everything is better with cheese).
