Regrets about inviting a friend over tonight - what to make?

I invited a friend to come watch the game with us tonight. I asked him on Tuesday, and he asked if he could get back to me, and I said yes.  He finally let me know last night at 10pm he's coming!

I've got no food in the house, a conference call at 9:30, a brunch/networking with a colleague at 11, and probably won't be in a position to shop until 1pm or so.  So, most crockpot meals are off the table at that point, even if I had inspiration. 

And I don't want to spend hours preparing food today. I've got a ton of other work to do. 

Here's the pain:  He can't eat tomatoes.  Any time I think of something easy to make, it always has tomatoes in it. 

I'm sure I'll come up with something. I'm just venting.  Thanks for listening!

  • I hate when that happens, a friend takes forever to get back to you so you start getting used to the idea of him/her not coming over. I'm sure you'll have a fun night!

  • How about making some sliders either burgers,turkey club, or chicken salad, etc. Other easy food ideas could be white pizza, buy a shell, mozzarella, fresh garlic, eevo and salt. It's a favorite of mine. Our local grocery stores sell wings, boneless wings and other quick dinner ideas in the deli department.

  • What about bruschetta?? You should easily pair it with a pasta dish or burgers..
  • this can be done in the crock pot, or just on the stove...

    step 1: pick meat of your choice...chicken, beef roast, pork loin, hamburgers, ribs, whatever you have

    step 2: place in crock pot or pan

    step 3: cover with 1c. ketchup and a can of regular or diet coke

    step 4: let simmer until meat is cooked and sauce is thick and tastes like bbq sauce

    when i was still eating meat, i would make this allllll the time.  The meat falls apart and is soooo tasty! i actually did it for the super bowl last year for my meat eating friends with chicken, when the chicken was cooked, i shredded it up and served it on dinner rolls as sliders.

  • Build your own hoagies!!! Just pick up different sandwhich meats, cheeses, some lettuce (l like the big bib kind), onions, pickles, mayo (we use oil and vinegar instead).. presto! Serve with fruit or chips or veggies and dip!

    This sounds good -- i'll have to try it another time, since we can't do the ketchup!  But thanks -- going in my files!

    LOL I thought you said he loved tomatoes!!! Yeah bruschetta wouldn't be good than..  I think Rotisserie chicken would be great  and the sandwiches sound good
