I just made Eggplant Parmesean from scratch with fresh Garlic and Basil and tomatoe sauce al fresca. Really good recipe - it came out AMAZING! Piping hot, ready to eat...then I get a phone call from DH that he needs to stay late at work to finish up a project he has been working on for the past two weeks. I understand, he has a deadline to meet....but seriously? He didn't know he was going to stay late EARLIER, like BEFORE I slaved in the kitchen and cooked him a nice dinner? I don't blame him - his entire office has been working hard lately and I'm actually proud he's so dedicated to his job - but boooooo =(. Apparently there are a few other people from his office staying late as well so they are going to order some pizzas and just bang out what they need to get done. This is not a good thing to happen on the week I'm PMSing. I may break down in tears lol. I'll eat my half and he can bring his for lunch tomorrow or something, but it won't taste as good with the crispy breadcrumbs and I wanted to have a nice dinner with him =(. Ok, rant over lol.

Yes, lol. I'll get over it - I'm just all PMSy and emotional today. It does taste SO good though - he'll be lucky if he gets any hehe

Here is the recipe, btw. I don't like eggplant when it gets all soggy and droopy and this came out perfect!
