L: Margarita Chicken Lean Cuisine Steam Packet.  I think it's new.  I saw it at Wally World the other day so I wanted to try it.  It's in a pouch and you place the pouch in the microwave for x minutes and the steam cooks it.

  • FWIW - I made some amazing bbq in the crockpot this past Sunday...so yummy!  It was a new recipe I found online...don't remember from what website either.

    I did 4Ibs of pork shoulder in 3 cans of root beer on low for 9 hrs...drained and shredded...put back into the crockpot and added about 2.5 cups of bbq sauce and let that cook on low for about another 30 mins. And OMG - it was so tasty, I was skeptic of the root beer, but it didn't have that taste at all.  It made a ton and I had to put half of it in the freezer after having leftovers last night.

    I'm having the same thing for lunch!  I had the sesame chicken one yesterday and it was really good, so I have high hopes for the margarita one. :-)

    For snacks I have yogurt and string cheese.

    Dinner is leftover chicken pot pie from last night.  It was gooood.

    Are you serious?  I made a pulled pork a few weeks back with pork shoulder, one can of root beer and one bottle of bbq sauce in our crock pot.  OMG...it was so good.

  • I have never made chicken pot pie...I see it as being very involved and am too lazy.  I haven't ate it either since I was pretty young.

    I'll let you know how it was.  It's almost lunch time for me! :-)  I liked that the one I had yesterday was actually good quality, white meat chicken and not mystery meat that I feel like most of the microwave-prepared meals have.

    no seriously, im obsessed.

    if you have never made kale, you do not know what you are missing.  between last night and lunch today i literally ate the ENTIRE PACKAGE of kale.  and i will be stopping at the store on my way home tonight to get more and make it again tonight.  it is SO easy.  cut it, clean it, put it in a (BIG) sautee pan with some EVOO and garlic, and then sprinkle on some nutmeg and a splash of h20 or chicken broth.  let it cook until its size has reduced and it is bright green.  thank me for making your life better.

    it is also delicious in soups!

    at the huge amount that i eat it, it is!  it is probably comparable to all of your other veggies, however, it cooks down to so little, and i can eat so much of it, that it is a little pricier.  but its worth trying it!  seriously, you just buy a bunch of it in your produce department, chop it up when you get home into smaller pieces, put it in a colander to rinse it and then put it in a sautee pan with EVOO, garlic, salt and pepper (not even needed) and i always sprinkle on some nutmeg, but it is not necessary.  i also always put in a really small splash of chicken broth or water, but its not needed either.  sautee until soft.  you can also roast it in the oven too, but i have never done that.  seems faster to cook it!

    L: veggie chile from my caf at work and a small bag of plain sunchips to dip in it

    D: probably baked honey garlic chicken breast and a salad fresca:

    1 cucumber peeled.  cut in half lengthwise, then cut each half in half again to make four strips.  cut the strips into cubes.

    cherry tomatoes cut in quarters

    finely chopped onion

    drizzle with EVOO, salt and paper.  let sit while you're finishing the main course of your meal.  The first time I tried it I was SHOCKED at how much flavor this salad has with with just a few simple ingredients.

    If you love kale, you have to try baked kale chips, and caldo verde soup.

    The kale chips are so plain and simple, and yet so yummy.

    For caldo verde, I make the sausage on the side and let DH add it to his bowl directly (I don't add any myself), I also use chorizo, or any sausage I have on hand. Again it is really simple yet tasty and filling.

  • B: cereal and berries

    L: grazed all day on almonds, raisins, all bran bites, apple, crackers

    D: I have been in a cooking mood all week with no time, and tonight I am finally let loose on the kitchen. I am making chili with cornbread, brocoli and beef casserole with egg noodles, and avgolemono soup. DH gets to choose what he feels like for supper and what we're eating over the next few days.

  • B: Blueberry cake - it tasted like a muffin.  Was good

    L: skipped.  I'm sooo hungry!!!

    D: slow roasted suckling pig.  It was featured on Best Things I ever ate.  I go on about it in another thread so I won't bore you with a duplicate post.

     

    Shauni: I LOVE Kale.  I just saute it with butter and Old Bay seasoning.  Divine.
