Fun! Mandalay Bay is nice, a little far away from a lot of the action, but it depends on the person whether that's good or not. Just get familiar with the train:)
I highly recommend making a Cirque du Soleil show a priority, we've seen "O" and Love and those shows were our favorite part of the 2 trips we saw them on. I've been to Mesa Grill in NYC, and it was fab, but there's one at Caesar's Palace. There are a lot of celebrity chef restaurants in Vegas, you can't really go wrong with Wolfgang Puck or Tom Colicchio. Some of our friends went to Craftsteak and said it was amazing.
You're also an east-coaster so you have more exposure to some of these places that us westerners don't on a regular basis:)
When are you going?
Mandalay Bay is my favorite hotel. I haven't been back in years so I don't have any suggestions, but I hope you have a great time!!
I remember going crazy over one of the restaurants in Paris, but can't remember which one!

2012 Reading Challenge
I am going next week for my cousin's 30th and we plan on eating at Mon Ami (something) in the Paris hotel. We were going to do the Eiffel Tower one but an entree was close to $50 (maybe $40). OUCH! I have no real restaurant rec's since I usually eat at the buffets when I'm there.
