What is your favorite thing to cook that always turns out great?  If you could link or copy/paste the recipe that would be fabulous!

  • So, I've slacking in the cooking department for a little bit so there isn't anything I cook regularly.  

    However, I was super proud of myself for the dinner I cooked last night! Its probably not very healthy, but it was very good. I cooked some italian sausage, broke up like hamburger meat, then added a little EVOO and sauteed mushrooms, fresh garlic and zucchini in it and put it over some whole wheat pasta and covered with a (store bought) red sauce. I was very disappointed when I got to work only to realize I forgot my leftovers in the fridge at home.

  • I think I cook a lot of good things, but I tend to make it up as I go which isn't good for sharing ;) I really like cooking TexMex - putting Rotel tomatoes in anything makes it good.
  • I can do a really good chicken tortilla soup which I know is not hard, but it always gets rave reviews.  My recipe is at home but I just loosely follow it, lets see if I can remember everything.

    I take all the meat off a rotisserie chicken and shred

    3-4 cans of chicken broth and 2 cans of beef broth

    Big can of rotel (28 oz)

    2 cans of corn

    2 poblano pepper chopped up

    1 white onion chopped up

    couple of handfuls of cilantro chopped up

    add to taste: ground cumin, cayenne pepper, chili powder, italian seasoning (I just use several shakes on all of these and i'm really liberal with the cayenne cause we like it hot)

    I also usually add a couple of cups of water to fill my pot to the top

    Combine all ingredients and cook on stovetop for 30 min-1 hr.   Top with tortilla chips, shredded chz, and sliced avocado.

  • I really love cooking Jessica Seinfeld's Crock Pot Lasagna.  I love that it's so simple to prep and then my house smells delicious when I get home.  For some reason - it makes me feel accomplished at the end of the day to have dinner there, hot, and yummy.  

    I also can also bake tilapia by throwing some spices on top of it and it never fails to taste really great.  It's a super cheap meal that also makes me feel like I really "prepared" something.  

    Satueed salmon is also a big hit.  With a little bit of cinnamon, paprika and salt.  Just a tablespoon of olive oil and it only takes about 6-7 minutes.   

  • I cook almost everyday and am always trying new recipes but i have a few go to recipes:

    Easy Stove Top Chicken

    Pound your chicken breast to make them thinner (I usually use 2 or 3).  They will cook quicker.  Dust them with a small amount of flour or bread crumbs.  Brown them in a small amount of olive oil with sliced onions and minced garlic.  Take them out of the pan and pour in cream of chicken soup with a tablespoon of soy sauce.  Wisk until smooth and then put chicken back in pan.  Cover and simmer until tender.  You can serve with either rice of pasta. I also do this with pork chops, sub the soup for beef broth (cream of mushroom would be good too), and sub the soy for teriyaki.

     

    I usually make these potatoes at least once a week.

     I make this meatloaf in the crock pot for DH when I have to work late.

    This is my go to lasagna recipe.

  • I don't know if they're is a "best" thing I cook but I can make spanish rice and sopas without a problem. I did grow up eating that stuff and learned from my mom.
  • PW's shrimp in a foil package.  Except instead of putting it in foil, I put it in a really large metal dutch oven.  Its much easier to clean that way.  The technique used makes the pasta and sauce taste EXCELLENT!

     

  • For some reason, the last two years that I've cooked the Thanksgiving turkey, guests have raved about it. I don't think I do anything different than the basic roast turkey technique.

    Second: Steak. I use the Cook's illustrated technique of putting it in the oven first and searing it second. Works like a charm.

    my popcorn skillz increased substantially when I got a new microwave with a "popcorn" button.

    I sub a couple tablespoons of olive oil for the butter, though.  Oh, and I also mix the dill in with oil instead of sprinkling it later on.  Yum!

  • reading this makes me think of Everyone Loves Raymond. The wife only had one recipe that she was good at.. I think it was lemon chicken.
