Re: chocolate cake...
My mom's recipe is amazing! Not only did she make it for most of my birthdays growing up, but family friends as well. :-)

This is my grandmother's recipe that is my go-to:
Crazy Cake
Ingredients:
1 ? cups flour
3 Tablespoons cocoapowder
1 cup sugar
1 teaspoon baking soda
? teaspoon salt
1 Tablespoon vinegar
1 Tablespoon vanilla extract
6 Tablespoons vegetable oil
1 cup cold water
Sift first 5 ingredients into an 8in greased, square pan. Make 3 holes- pour vinegar, oil and vanilla into holes. Pour water over all and mix well. (This method works well if you are going to serve it from the pan. If you want to turn it out you should mix it in a bowl first.) Bake at 350 for 35 minutes.
I like the Hershey's chocolate cake recipe. It is on my blog.
I also like the Cook's Illustrated recipe...Oh. I just found this blog post that compares both:

I bake a chocolate satin cake for MH's birthday every year-- but it's more like a mousse-cake than a traditional floured cake.
I have yet to find a really good, moist, straight-up chocolate cake so I'm interested to see what comes up.
MY birthday cake is always a German Chocolate Cake-- and my sister used the traditional recipe (the one invented my Mister German himself) and it was PHENOMENAL! Moist, delicious. Recipe available if anyone wants it.
Uhm, the one my mom makes? I think she uses the classic Hershey's chocolate cake recipe, and used to do them every year for our birthdays with the German coconut frosting, and it was like magic.
Now I want a chocolate cake. And my mom.

Aww. Isn't it funny how thinking about food makes you miss a person? I'm the same way.
Absolutely! Honestly, some of my best memories w/ family and friends involve great meals or food experiences together, I love it! Hmmmm... maybe I can convince her to make me a chocolate cake next weekend when Kyle and I come up???

I'm kind of late here, but this is my favorite:
http://www.bonappetit.com/recipes/2008/12/devils_food_layer_cake_with_peppermint_frosting
I've made the full recipe and also use the cake recipe with other fillings/frostings and as cupcakes.
Um, that frosting sounds absolutely delicious! Recipe, please?
Listen, I have a baking & pastry arts degree and I STILL use a box on occasion...some of them are very good and if I'm short on time or patience, they work great!
Thank goodness for you! I was feeling a lot of shame until I read your response. I
the Betty Crocker mixes (not so much Duncan Hines, though). I do make my own buttercream frosting, at least.
On my 40 before 40 list is perfecting my own "from scratch" cake. (I also want to perfect a pie crust and finally conquer cream cheese brownies.)
I am also late here, but I rarely if ever stray from the Hershey's Perfect Chocolate Cake. It is rich and moist, so if I were looking for something dense or drier for maybe a really sticky frosting, it might not work. But otherwise I love it.
I however have yet to really find a good yellow or white cake that matches the Hershey's one except for box mixes. Which I hate using box mixes. So I pretty much only ever make chocolate cake when I do make cake!
