ground turkey recipes?

DH and I have a pound of ground turkey to use up for dinner tonight and no inspiration.  Anyone have a good (tested and good!) recipes for using it up?  Hard to trust anything online because Turkey can get so dried out.

  • DH and I use ground turkey for tacos sometimes.  Since you add water and seasoning, it's not very dry.  And, the seasoning adds some dark color so it's not quite as grey-ish.

  • I made this on Monday and it was GOOD!  I did use lamb but I think turkey would be just fine.

  • We usually use ground turkey instead of beef for tacos, like kellie said. It doesn't get dried out, and it is super easy.

    I often make meatballs with ground turkey too- ground turkey, 1 egg, Italian breadcrumbs (about 1/3 cup or so), grated Parm cheese (also about 1/3 cup), basil, and salt/pepper. Saute in olive oil until browned, then plop them into a large pot of tomato sauce, and let simmer lightly for about an hour or so. 
  • I make meatloaf with ground turkey all of the time.  This is a good recipe:

    I just drown the meatballs in BBQ sauce and top with a little cheddar cheese.  Sometimes I add some sliced red bell peppers.  Smile  It's one of my favorite combos... I do the same when we have leftover chicken.

  • Angela - I think that recipe was meant to be tried by me.  Red bell peppers were on sale at the grocery today so I brought a few home with the intent to make "something" with them.  That might be a winner!
