DH and I have a pound of ground turkey to use up for dinner tonight and no inspiration. Anyone have a good (tested and good!) recipes for using it up? Hard to trust anything online because Turkey can get so dried out.

I made this on Monday and it was GOOD! I did use lamb but I think turkey would be just fine.

I often make meatballs with ground turkey too- ground turkey, 1 egg, Italian breadcrumbs (about 1/3 cup or so), grated Parm cheese (also about 1/3 cup), basil, and salt/pepper. Saute in olive oil until browned, then plop them into a large pot of tomato sauce, and let simmer lightly for about an hour or so.
I make meatloaf with ground turkey all of the time. This is a good recipe:

I totally forgot about this -- I used to make turkey meatballs all the time! Thanks for the reminder! I sometimes baked mine and made BBQ meatball sandwiches with them.

Ooh, BBQ meatballs sound amazing! Do you have a recipe for it, or is it just meatballs in BBQ sauce?
I just drown the meatballs in BBQ sauce and top with a little cheddar cheese. Sometimes I add some sliced red bell peppers.
It's one of my favorite combos... I do the same when we have leftover chicken.
