food question

I know several of us got kitchen aid mixers for our weddings, has anyone else noticed food seeming more dense using it?  Several things I've made recently have come out seeming more dense...not sure if it is a mixer thing (not changing something when going from hand to stand mixer) or if there is something going on with the recipes themselves...

  • I've had my stand mixer for several years and all the recipes are the same with the mixer, hand beaters or by hand... never noticed a change in density.
  • it could just be the recipes, or maybe I need to sift my flour better...

  • Yeah, I have not experienced any differences either.

  • the only thing that I could think of, and it might be a stretch, is if the mixer is running too long, and you've over mixed something -  but it really depends on what your making.  There are some recipes in baking that you have to be careful not to over mix (the recipe will usually say this, like a muffin batter or something).  The stand mixer is usually pretty efficient at mixing, so sometimes I have to remember not to walk away and just 'let it run' for a moment while I grab something else.  I've almost ruined egg whites and whipped cream by stepping away for a 'sec', since with a hand mixer these things take like 10 minutes to whip.
