Sunday baking/cooking

  • These turned out great Horseradish Bacon Cheddar Potatoes 2 medium russet potatoes ( I used 4) canola oil to coat potatoes kosher salt 4 oz cream cheese, softened ( I used sour cream instead) 1/4 cup-1/2 cup half & half 1/4 cup shredded sharp cheddar cheese 1/4 cup crumbled cooked bacon 1-2 teaspoons horseradish sliced green onions or fresh chopped parsley for garnish (optional) Heat oven to 350 degrees. Grease a 13x9 baking dish and set aside. Wash potatoes thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Allow to cool slightly enough to handle and keep the oven on. Once cooled enough to handle, cut the potato in large dice and place in a bowl. Add the cream cheese, half and half, half of the cheddar cheese, bacon and horseradish to the bowl. Using a potato masher, mash the ingredients together. Place in the prepared 13x9 baking dish, sprinkle the remaining half of cheddar cheese and bake in the preheated oven fo r 15-20 minutes until warmed through and cheese is melted. Before serving, garnish with green onions or parsley if desired.

  • We had friends over for dinner yesterday and I made a few things: These scallops were yummy but don't put too much sauce in the pan or they won't caramelize properly. This lasagna is good, especially the spicy sauce. I made it half veggie for me. Next time I think I'll reduce the sauce less - I like my lasagna with more liquidy sauce that you have to sop up with bread. Then we had this flourless chocolate cake. I've made it before and I love it.

    This morning, I made Alton Brown's French toast and it was delicious as always.

  • We did house hunting this weekend and then I spent today with MIL shopping so not much cooking or baking got done. However I did make chicken and risotto for dinner with asparagus and a strawberry cobbler for dessert.

  • Not that this is groundbreaking, but I finally made roasted broccoli with garlic without burning it and dh loved it. Score.

  • I made the smash cake for Q's birthday party this weekend.  Pictures are still on the camera
  • I took the weekend off but I did manage to make some breakfast sandwiches for the week. DH made some homemade teryiaki sauce for our dinner tonight (it is to.die.for and we plan to make this instead of buying the store bought kind).

  • Last night I made cheeseburgers and Shrewsberry Cookies (they're a traditional tea cookie with cinnamon and rose extract). I also made rice and beans with veggies last week and tonight I'm making my smoked gouda mac and cheese, pesto mozzarella garlic bread, and possibly some steak too.

  • I made champagne cupcakes.  These were great!  I used a bottle of almond champagne that I bought at the end of a looong day of wine tasting, which has just been sitting in my house since then.
