I'll try to post recipes on the sticky today.
Our final menu ended up being:
Jambalaya (Emrill's recipe - sooo good!)
Buffalo Chicken Dip (HUGE hit, folks cleaned it out!)
Brie and Pear preserves (thanks to Allie [alecat]! everyone was like ZOMG! where did you get these preserves?!)
Prosciutto wrapped swiss and apple
Queso Dip (the only kinda flop, the flavor was perfect, but the texture was not... like there was some separation - anyone with experience on making awesome cheese dips, thoughts/tips are welcome!)
Big Veggie Platter with red bell pepper hummus and a ranch dip
Red Velvet Cake balls
Stuffed Strawberries (also cleaned out!)

I was really surprised with how not-crazy I was trying to get it all done. The jambalaya took the most time, but I'd say like 30-40 minutes, but it's all chopping veggies and meats and throwing them in a pot.
Even the strawberries weren't too bad (though they aren't a last minute thing, I could easily see myself stabbing my thumb if I was in a rush to cut them all).
The only thing that made me a little crazy were the cake balls! Dipping them in the chocolate turned into a giant hot mess. Found out that you need to keep the chocolate really hot so it doesn't thicken up... and keep the cake balls as cold as possible - keep them in the freezer till the chocolate is ready for dipping. I used a toothpick technique for dipping them, and if they soften up even slightly, the toothpick doesn't work and you end up with chocolate on everything!

I think these are all taken with my powershot too. I usually photograph food with my dslr, but I didn't want to lug that around.

And I'm all about the more the merrier with parties
We actually had a total of 19 at the house, and while I was getting concerned with that number and who else I wanted to invite (we've never had more than 10), it all went really well, plenty of room for all.
I can't wait for summer though, we have a giant yard and a nice big porch, so we can feel much more comfortable inviting everyone and their brother.
