This. But I voted for mac&cheese because I love it so much. Usually a touch of milk when reheating helps.
This but I was thinking some kind of soup, I don't really have anything in mind but something that is "meal" worth so a Stew maybe?

Maybe add meat so its more of a full meal? I like buffalo chicken in mac & cheese. and broccoli.

Lasagna is also really good. I've froze and baked a taco bake recipe, too. It is SO good and really easy. I can get you the recipe it you would like.

As an aside, I thought if I make up the mac n' cheese but I don't bake it then when they bake it it will be good, right?
Maybe I'll do half a baked ziti and half a mac n cheese....but I am curious to see Jo's taco bake recipe now!
Christina, I like the idea of a stew...I will research, as I know they do eat meat.
Emily, I would for sure add broccoli to the mac n' cheese and maybe even some bacon. I was thinking I could make a meat sauce for baked ziti.
I got the recipe from a blog. I do not remember which one off the top of my head. I have changed it up a bit to fit our tastes. It's not the healthiest recipe, but it is SO good.
Ingredients:
Refrigerated biscuit dough (about a 10oz container, give or take)
1 jar taco sauce (16oz)
1/2 to 1lb. ground beef or turkey (your preference)
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small onion, chopped
1t. chili powder
1t. cumin
2c. shredded cheese (I use a mixture of sharp cheddar, colby jack, and Monterrey jack depending on what is on hand)
Preheat oven to 400.
Pour taco sauce in a greased 9x13 dish (this makes a lot, sometimes I will split the recipe in to two 8x8 pans and freeze one for later). Cut up biscuits in to fourths and place in taco sauce. Turn once to coat. Top with half of the cheese and bake about 15 minutes.
While biscuits are baking, cook the meat, peppers, onion, chili powder, and cumin in a skillet until meat is browned.
Top biscuits with meat mixture and remaining cheese. Cook an additional 5-7 minutes, until cheese is melted.
To freeze, skip the last cooking step and freeze at that point. I usually thaw in the fridge for about a day and then reheat everything, covered with foil for about 10 minutes and uncover for about 5 more minutes. I'm sure you could reheat from frozen. It will take longer and you want to make sure you covered it with foil for the majority so the cheese doesn't burn.
