This Weekend's Menu!!!

I usually do a lot better if I have a menu set going in to the weekend, so we avoid the "let's just go out to eat" bit. : ) So ... here goes!

Friday: Skinny Rattlesnake Pasta (Grilled Blackened Chicken Breast, Low-Fat Ragu Alfredo Sauce, Parm/Asiago, tons of spices, and whole-wheat pasta for myself) & some steamed veggies!

Saturday: Beer Butt Chicken, Roasted Potatoes, Strawberry Romaine Salad

Sunday: Pot Roast (Cooking it in my pressure cooker for the first time!), Mashed Potatoes and Cooked Carrots.

I have also decided that since Jeff got me the Perfect Brownie pan thingy that I had been wanting, I better make him some brownies already since I did get it at Christmas. Haha!

    Not sure what I'm making for dinner - Probably a Hawaiian Pizza (Homemade). I also need to make a coconut layer cake with pineapple filling for my Mom's birthday for tomorrow. After that, who knows!! I need to make some chili this weekend though

  • Tonight we are having Mexican casserole.  It's something new and I can't wait to try it.

    Tomorrow we will probably go out since we will be gone most of the day.

    Sunday I usually make a bigger/more labor intensive meal.  We are having roast, some kind of potatoes and peas.  If I'm feeling eager, I may make a dessert or something.  The warmer weather this week has me wanting fresh summer-time fruits.

    Danie - i have to know - what is beer butt chicken??

     Tonight I'm making a pork tenderloin that DH loves (it's Hormel brand, and it comes marinated in apple bourben BBQ sauce) - some rice and veggies on the side

    Tomorrow - I have no clue - maybe pizza?  I have a pizza dough that I made and stuck in the freezer 2 weeks ago

    Sunday - I'm in the mood for a roasted chicken!!  Maybe with some sweet potato fries

     I like menu planning too - it helps me budget for groceries!  And it ensures I try new recipes!

     

     

     

     

  • Beer Butt Chicken

    1 Chicken, whole w/ insides removed
    1 can beer (Budweiser works best)
    Extra-Virgin Olive Oil
    Seasons (what every you want)
    5 cloves garlic, peeled
    One Beer-Can Chicken Holder (Wal-Mart)

    Pre-heat oven to 450. Coat the outside of the chicken in the olive oil. Make a mixture of seasonings (I use all kinds of stuff), then rub them on with your figertips all over the outside of the chicken. I also like to rub them on the inside of the skin, too. Pour about 1/4 of the beer out of the can, then put the whole, peeled garlic cloves inside. Put the holder in an aluminum pie pan (to catch the drippings). Put the beer can in the holder, then slide the chicken over it, butt first! Put it on the oven rack as low as it can go. Bake for one hour, or until done. Absolutely fabulous!!!

    You can also make these on a grill, which is great...but I always manage to start the chicken legs on fire...hahahah!

  • We always menu plan sunday-thursday and then wing it on the weekends, which inevitably leads to wasting money on crap food when we can't decide what to make.

    Fridays we always cook something fancy-ish and have it with a bottle of wine. Haven't decided what we're making tonight but maybe chili rellenos?

    Tomorrow I have leftover stuffed shells in the freezer from when we made them a couple weeks ago so we'll have that.

    Sunday is TBD when we make next week's menu!

    I don't usually cook on the weekends - very seldom.  Friday is usually a Subway night unless we go out for fish.....tonight it's Subway.  Tomorrow is Hungarian Heritage night at our church so we're having dinner there.  Then Sunday, as always, dinner over mom & dad's house.

  • Tonight we are doing Chicken Cordon Bleu.

    Saturday:  I'll probably stick a roast in the crock pot.

    Sunday:  leftovers as hubby as to work

  • Rachel, how did you make your stuffed shells?  I made some this week and was less than impressed.  The next night I added some Italian sausage and parm cheese to them which helped.

    Anniversary

  • Tonight is Chicken fried steak and mashed potatoes.

    Tomorrow is homemade pizza.

    and Sunday is Spaghetti.

  • Tonight: Crock pot salsa chicken (I make it with chicken breasts, 1/2 jar of salsa, a can of lowfat mushroom soup, low sodium taco seasoning, and black beans); served with rice Tomorrow: Going out to dinner for DH's friend's bday - Brazilian rodizio - yummm! Sunday: Whole wheat pasta with turkey meatballs
