I have chicken marinading in a herb garlic sauce (I just found at Target; way cheaper than the Lawry's marinades DH & I are obsessed with). I'll bake that and then I think for a side I'm going to do stuffing w/veggies. It's cold and rainy here, so that is currently sounding like a great comfort food-style side!

DH's out of town this week so I don't feel like cooking. I bought a deli chicken yesterday and will probably use it to make a chicken quesadilla. Add some frozen veggies and I'm done.

Salmon cut into bite-size pieces & tossed with lemon juice, teeny bit of butter, shallots, peas, and bowtie pasta. And probably some fruit on the side. There were some awesome deals on produce at Kroger yesterday so I loaded up.

the bacon pierogi recipe from StephanieCooks posted last week...lunch is homemade pizza if DH shapes up so I can restrain from shoving the raw dough down his throat...we're doing taxes today and he needs to chill the heck out!

We are having chicken and herb tortellini with salad and garlic toast for sides. Then I make a strawberry and cream cake for dessert

My Dad's Chicken "stuff" recipe:

2-3 breasts chicken cut into cubes

1/2 onion diced

2 gloves garlic-pressed

sliced mushrooms

(cook above four ingredients in a little EVOO)

Boil wide egg noodles

Mix together chicken and noodles with:

1 can cream of mushroom

8oz sour cream

1/4 cupish of ranch dressing

2 cups of mozzarella cheese

Put into a casserole dish and bake at 350 for 35 min.

**You can also put crushed cracker crumbs on the top**

We're having frozen pizza. We are on vacation so I don't feel like cooking. Tomorrow it's shrimp scampi, Wed is salsa chicken, Thurs pot pie. So today I am going to just enjoy being lazy.

Chicken fajitas!

I spent $40 bucks for a weeks worth of dinners at the store yesterday - woot! That never happens... but to be fair, I tried to make the list around what we already had, so all I needed was a stop in the produce section and at the butcher counter.

I'm just cooking for me tonight - Zach's at work - so I'm thinking BBQ sandwiches & mac'n'cheese. Also makes it easy to nuke something before I go to work at 4:30 tomorrow. I'll do something big Wednesday. Maybe.
