My SIL has requested the gouda and potato pizza. So my new question is, what can I serve with it? There will be 4 of us and I can only make 1 pizza at a time. Is there a great pasta dish or a veggie side that you would want to eat with this pizza? It's on the heavier side and I don't want to overload everyone.
Any fab recipes or ideas?
Oh, and if anyone has a breakfast casserole recipe to share, I'd love one of those too.

- Chili (make ahead) with a variety of toppings (cheese, onions, hot sauce, sour cream, avocado, etc) and cornbread
- veggie lasagne with garlic bread, salad, cheese and olives plate as an app
- minestrone soup (made with veggie broth), warm french or garlic bread, salad, and some app nibbles with something heavier for dessert like apple pie
I didn't see your original post but you could serve some kind of vegetable soup, vegetable side (like roasted broccoli or braised greens), or some kind of substantial salad (one of my favorites is greens with beets, grapefruit, hazelnuts and goat cheese, and just a simple light vinaigrette) with that pizza.
As for a breakfast casserole, I usually make this veggie bread pudding casserole for dinner but I think it'd be good for breakfast too. You can add/change the veggies to whatever you like (I'd probably take the corn out for breakfast), add meat (or faux meat) if you wanted, or use a different cheese.
