Lemon Artichoke Risotto

 I made it last night, after wanting to make it for at least a week. It is AMAZING! 

But, I made a little change.  I subbed in about 1/2-3/4 cup of white wine for some of the liquid because, well, I wanted to.  I think it adds a little something extra.  And, if you aren't going to serve all of it (it makes a ton), I would just put the parsley on what you will serve, because it gets all brown and unappetizing when it hangs out/gets reheated, etc.

Anyway, try it.  It's SOOOO good.

    I love wine in risotto. You're right. It does add a little something extra. I love lemon. I love artichoke. This makes me happy.

  • I don't think I've ever actually had risotto before. I was culinarily (made up word) sheltered as a child. I should put this on my list of things to cook when I'm feeling like something new.

  • So I caught one episode of The Next Food Network Star (the season Melissa D'Arabian won) and a contestant made risotto. The judges declared it an absolute massacre of an attempt and said how difficult it was to make a good risotto. Now, I'm terrified to try it.

  • I'm terrified to make risotto, too [I was supposed to make it last year but chickened out], but I'm gonna have to try this one. It looks so tasty.

    I just tried making risotto for the first time last week (Lemon Parsley) and it turned out fairly well. But the addition of artichokes just made me moan a little bit. Out loud. At work Embarrassed

  • Yeah, I think I actually over cooked mine a littly because it was a little on the solid side, but I don't really care.  It's darn tasty.  I'm considering making some sort of risotto patty tonight with the leftovers.  Coat in a little egg wash, roll in some bread crumbs, walla!

  • I've made risotto before - twice.  Both times I think it turned out and so does DH and so did our friends who had it.  BUT, I'm from the sticks so I think DH is the only one who's actually had it in a restaurant so who knows if it turned out like it was supposed to (I think it did, but...) and anyway, it tasted good both times so who cares anyway...
