I need help with dinner. I cooked a pork loin in the crockpot, it has a brown sugar/balsamic vinegar glaze with a few other spices thrown in. It is delicious by the way, if anyone wants the recipe. My H usually likes to eat this kind of thing on sandwiches or with mashed potatoes. I'm looking for some lighter options to serve it with, any ideas? TIA!

I would serve it with rice and green beans. These seem to be staple sides in our house.

As far as sides, I'd probably do a rice and steamed veggies. Sometimes I make fruit salsas or relishes to go with meats and DH really likes it.
Are you shredding it first, or slicing it?
If you're looking for really healthy, you can make mashed cauliflower or cauliflower rice, I also think it would be great with a slaw salad, either hot or cold. You could also do sweet potatoes, which are healthier than regular. We're big fans of oven baked SP fries or chips with the mandoline.
Sorry for the post and run. I was sort of looking for sandwich/mashed potato alternatives, but I've already failed. I went to a European Restaurant and Bakery for lunch, got the best gyro of my life then bought some more of the homemade bread to eat with the pork tonight. It fell apart in the crockpot it was so tender, so it will be shredded.
