Chicken & Mushrooms (New Recipe)

Well, last night I just kind of came up with this. It was SO good!

Chicken & Mushrooms
(Recipe is per serving)

chicken breast, cut into strips
1 cup fresh mushrooms, sliced (I suggest Baby Bellas)
1/4 cup water
1/4 cup Ragu Light Alfredo Sauce
1/4 cup parmesan/asiago cheese mixture
Mrs. Dash Southwest Seasoning
1 potato, baked

Spray a saute pan with Pam Organic Olive Oil cooking spray after it is heated over medium-high heat. Put in strips of chicken and sprinkle with however much Mrs. Dash you want. Cook until chicken is almost done, then add in the mushrooms. It is okay if a bit of the chicken browns to the bottom of the pan. Put in the water and scrape the pan so the browned bits from the bottom combine with the water to make almost a sauce. When water has thickened and mushrooms are cooked through, add in the Alfredo sauce and the cheese. Smash the baked potato down on a plate, then pour the chicken, mushrooms and sauce over.

It sounds odd, but it turned out GREAT! I'm sure you could add a lot more veggies to, but I just had fresh mushrooms on hand. Also, if you happen to have a stainless steel saute pan, that will work best.
