Have you ever frozen muffins?

I have been on a food-freezing kick in preparation for our first weeks with baby.  I have 4 ripe bananas, so I was thinking of making banana muffins and freezing them.  Is there anything I need to know?  I'm assuming I just bake as usual, cool, toss them in a freezer bag, freeze, and thaw on the counter when I'm ready to eat one.  Is that all there is to it?  Would thawing in the microwave be a better option?

  • We freeze muffins when we buy them from Costco since they are too big to eat before going bad. We pretty much do the same thing: bag them in a freezer bag, then thaw them on the counter when we are ready to eat them. Banana muffins sound yummy!

  • I do it all the time. You can double bag or wrap each in saran wrap if you are worried about freezer burn, but I usually eat them fast enough that its not an issue.

    I'm using this recipe that I randomly found... but I'll be adding cinnamon and vanilla.  Hopefully they're as good as she claims them to be!

  • I do it all the time.  Just throw into a zip lock bag or wrap in saran wrap.  I take it out the night before to thaw if I want it the next morning.  I eat them semi frozen too - I love pumpkin muffins.
  • I usually pop them in the oven when I have time rather than nukingSince I like the bit of crisp on the top and edge, but they are totally fine frozen ! I just Froze a bunch of Smitten kitchen's apple cinnamon muffins. DELISH. On a non muffin note, excited to see pics of that lil girl and learn her name !! :)

  • My mom used to make muffins for my dad's lunch & freeze them. She would just take one out the night before & by lunch the next day it would be defrosted.
  • I have some frozen muffins in my freezer now.  I just take one or two out and pop them in the microwave for about 30 seconds and then eat!
