Posting for Nikki:
Basic Sausage & Peppers
2-3 lbs Italian Sausage (sweet or hot or mix 'em together)
2-3 green peppers, cut into 1" pieces (I usually do 1 pepper to each pound of sausage)
40-ish oz of Plain Hunt's Tomato Sauce
Minced garlic
Spices to taste (basil, oregano, italian seasoning)
Cut the sausage into small, bite-size pieces. Put some olive oil and minced garlic into a big heavy pot and heat it up. Add the sausage, browning most of the way through. Add tomato sauce and seasonings of your choice (I like to add basil, oregano, parsley, etc., or you could use Italian Seasoning). Let that simmer for about 35 minutes or so. Then add your cut green peppers. Simmer all ingredients together until peppers have reached the consistency you like.
Serve over pasta/noodles, rice, or even as sandwiches on big sub rolls.
