I showed her your bio, as I love all the things you DIY!
My question is do you have instructions for your bouquet and cake?

for my bouquet, it was mostly trial and error. they were all fake flowers, so i started all the bouquets about 6-7 months in advance haha...i had never made bouquets before, so i pretty much just tried a bunch of stuff out! i just bought the flowers i wanted, some floral tape and went at it! i also bought a brown sharpie to color the floral tape brown once it was on the bouquet because the green was too stark with the other colors on the bouquet.
as for the ribbon on the handle, i knew what style i wanted and i googled/youtube'd until i found how to do it. you basically just wrap your base color around and around, then take your accent color and wrap it around, going back and forth and you secure it in place with long needles that have pearls on the ends. i think they are just called boutonniere pins at craft stores
aaaaand the cake...haha well, i am a cake decorator (www.cmykakes.com) so i have had a lot of experience in decorating cakes! so, it's sort of hard to give instructions on how to make a cake : but, basically i just covered all the tiers in white fondant, then took brown fondant, "snaked" it out into long pieces for the branches, and wrapped it around where i wanted. i made some branches in advance too (like a few days), so that they would be harden-up and able to stand up in places. then i just attached my gumpaste cherry blossoms on (also made in advance so they could be hard) with royal icing. the week of the wedding was absolute chaos with that cake hahaha! and delivering it too! it was a lot of added stress, but in the end, i'm very happy i did it because it's exactly how i wanted it to be.

Her wedding is not until August 2012, so we have lots of time for practice. I have made a few cakes with fondant myself, and will practice a lot before her big day. I suggested to her that we make the bottom layers fake, so we could prepare those ahead of time, and maybe serve a sheet cake for people to eat.
I think we might even use fresh or real looking fake flowers for the cake also, to save on prep time. I can make fondant, but making all those cherry blossoms could be another story.

I have a quetion. Do you offer your customers a dairy free/nut free product at all? I ask this because we have a local cake designer who does beautiful work, very much like yours.
For my wedding I asked her to make a dairy/nut free as my son is allergic to both. Her reply was, NO, as she does not deter from her tried and true recipie. I found this a little odd. Is this common of cake makers/decorators? In the end I made my own cake but kept it in line with our natural theme, and went with a rice krispie cake. I made the bottom two layers ahead of time,a nd teh top the night before so we could easily cut into it. I then made individually wrapped starfish shaped ricekrispie treats for peopel to eat.

and actually, ALL my cakes are dairy free lol...the CAKE part. buttercream i think would be a little hard to make dairy-free, but i'm sure it's possible to do. i've just never tried/thought about it, but certainly if a customer asked me to, i would for sure look into doing it for them! and a cake can DEFINITELY be nut-free too! at the bottom of my flavors page i have a little disclaimer saying: "mycakes contain no nuts or nut ingredients unless specifically listedand i do everything possible to prevent cross contamination; however,CMYKakes is not a nut free bakery." but yeah, there are a ton of options for nut-free lol
i'm surprised she just shot you down with that, but, i guess some people don't like to change their ways.
also! the fake tiers is a great idea. actually, all our tiers were fake except for the bottom corner for us to cut into at the reception lol...BUT! i didn't do them far in advance because although you aren't going to eat the fondant or anything, it could still change colors and "yellow" if it's white fondant, for example. i wanted all the tiers looking the exact same, so that's why i waited until 2 days before the wedding to do everything. i had made cakes for the kitchen to cut up too
vanilla almond cake with lemon, amaretto buttercream, and raspberry fillings....MMMMM! my favorite hehe
