Party planning help!

I was busy all weekend sanding/priming/caulking/prepping/taping/painting... and finally finished, complete with moving all furniture into place... last night at 8:19.   This week I need to spend the nights unpacking and cleaning and returning and buying things for our house... and studying so I don't look like an idiot when I give my first lecture next week.

We are having an early St. Patrick's day party/open house/house warming party on Saturday. I plan on making my mom's soda bread, my dad's homemade Irish cream, and my (really epicurious.com) awesome chocolate stout (aka guinness) cake in the form of mini-cupcakes.   I will probably buy some corned beef for sandwhiches, too.  The soda bread and the cupcakes will take most of the time I have available for party prep (Friday until 8pm, and Saturday). 

 Do you have any stand by, easy to make/prepare ahead of time party dishes??  I am not looking for green/Irish themed stuff b/c I think we have that covered...  just your favorite easy to make dishes :) 

If worse comes to worseI will probably stop at Trader Joe's and buy some of their frozen appetizers, including their spinich & artichoke dip.

  • Turkey Ball, served with crackers, is a standby fave at our family parties. Also popular is jell-o dessert (not just jell-o! its got other stuff in it), sour cream & onion dip, crab dip, and mini-quiches (we usually cheat this one and get the frozen ones, but they are amazing).

    Let me know if you want any of the recipes :) I'd be glad to share.

  • You can never fail with a veggie tray & dip  or a cheese,cracker & pepperoni tray. We also make a taco dip. I make the dip like a day or 2 ahead of time (1 8oz package Cream Cheese and 4 ounces Sour Cream then mix in 1 package taco seasoning) Then right before the party I put that in the bottom of a 9*13 pan, then pour on 1 small jar of ortega taco sauce, then shredded lettuce, tomatoes and cheese. You can add olives etc if you like.

  • I also like buying a few blocks of cheese and 2-3 varieties of crackers and setting all of that out. Also, at a Pampered Chef party I went to, the consultant made an Antipasti Pull-Apart Pizza. She used two cans of refrigerated French dough and cut them, and on top of it are ingredients such as artichoke hearts, mozzarella cheese, peppers, and olives.It was sooo good, and I'm kinda picky. Let me know if you want the whole recipe!

    Buffalo Chicken Dip, Cheesy Spinach Dip or Maple Glazed Meatballs.

    They are all SUPER easy to make (the spinach dip and the meatballs are made in the crockpot) - let me know if you want any of the recipes!
