Chicken Tikka Masala Recipe

I made this tonight and it was pretty good, close to the real thing as far as taste goes.  

Ingredients: 

1 1/2 lbs boneless skinless chicken breasts cut into cubes

2 tbsp butter

1 onion chopped (1 cup)

2 tbsp lemon juice

1 14oz can diced tomatoes, with liquid

1/3 cup heavy cream

1tbsp cornstarch

1/2 tsp salt

2 tsp paprika

1 tsp minced garlic (dried)

1 tsp garam masala

1/2 tsp ground cumin

1/2 tsp crushed red pepper (optional for those that like spice)

Directions:

Melt butter in skillet on medium heat.  Add chicken, onion, and lemon juice and cook until chicken is no longer pink. Add all the spices except the crushed red pepper, cook and stir 1 minute.  Add tomatoes until well mixed.  In separate bowl stir cream into cornstarch and salt until smooth.  Gradually stir into skillet, and add red pepper to taste if desired.  Bring to boil.  Reduce heat to low, and simmer 5 minutes or until sauce is slightly thickened.  

**great served over jasmine rice**
