White Chicken Chili?

What is this crockpot wonder that so many of you rave about?  I have never seen white chili before.

And yes, I am just too lazy to google it.

  • I love white chicken chili...it is super easy to make and amazing.

    One time though DH (then FI) dropped my crockpot insert chock full of chicken chili as he was putting it into the refrigerator. It shattered everywhere and I went outside for 30 minutes because I was so mad.

    This is the recipe I use.

     Ingredients:
    1 1/2 pound skinless chicken thighs
    1 onion, chopped
    2 cloves garlic, chopped
    1 can (14 oz. size) chicken broth
    1 teaspoon cumin
    1 teaspoon oregano
    salt and pepper
    1/2 teaspoon red pepper sauce
    2 cans great northern beans, drained and rinsed
    1 can (15 oz. size) shoepeg corn
    3 tablespoons lime juice
    2 tablespoons cilantro

    Directions:
    Mix onion, garlic, broth, cumin, oregano, salt and pepper sauce in 4 qt. slow cooker. Add chicken. Cover and cook on low 4 - 5 hours. Remove chicken and debone. Shred chicken and return to cooker. Add beans, corn, lime juice and cilantro. Cover and cook on low 20 minutes.

  • It's yummy, especially for those who don't like alot of red meat in their diet.

    In my recipe, I use:

    boneless chicken breast, white corn, navy beans, a packet of taco seasoning, chicken broth, cream of chicken (condensed chicken soup), jalepeno peppers chopped

    I put the chicken breast in the crockpot, strain the beans and the corn and add those.  I mix the cream of chicken, chicken broth, jalepeno peppers and taco seasoning together in a bowl then pour over the top.  salt and pepper to taste.

    cooked on low for 8 hours, you just have to stir it and the chicken gets so tender it will break apart on it's own without cutting, etc.

    I top it with green onions / scallions, maybe some sour cream, and some monterray jack cheese and serve with tortilla chips or fritos.  YUM!

  • I'm ubber late, but I make a white chicken chili that's NOT in a crockpot...it's make all in one pot over the stove and takes about 20 mins to make...super easy for a meal during the week to whip up and have for leftovers!

    Ingredients
    1T veg. oil
    1 medium onion (chopped)
    1lb ground chicken
    1T chili powder
    1 can cream of chicken soup (family size)
    1 pouch dry onion soup mix
    1 can canellini beans (rinsed and drained)
    1 can garbanzo beans (rinsed and drained)
    1 can corn
    shredded cheddar cheese for a garnish

    Directions
    Heat oil in a large pot over medium/high heat.
    Add onion; saute for 2-3 minutes until softened and translucent.
    Add ground chicken; saute 5-7 minutes until no longer pink.
    Add chili seasoning, soup, beans, and corn.
    Bring to a boil.
    Redue heat to medium/low, simmer 8-10 minutes until all the flavors are blended.
