I wish my health insurance covered nutritionists/dieticians. Well, it only does but only for certain health conditions. Thankfully Carolyn's fee is under $100 per visit, so it's not too bad.
I didn't know they have other nutritionists there. I've seen 3 providers at that clinic and they're all great so I hope they get back to you.

I would look into Nutritonal Weight and Wellness. I've seen Tamara in North Oaks which would be too far for you but I'm sure they are all good. They have locations in St Paul, Wayzata, and Lakeville too. They also have a radio show called Dishing Up Nutrition on My Talk 107.1 FM on Saturday mornings from 8-9am or they have the podcasts available here.

germangirl - this is really interesting. I had a consultation with a certified holistic nutrition counselor not too long ago. I wanted to work with her because she made all these great claims of what she could do but there was something off about the whole thing, the way she presented her degree and the contract she wanted me to sign. I'm going to email you if that's okay.
ETA: But I don't want to dissuade you strengh. It wasn't the person GermanGirl recommended.

For sure, Jenny, email me.
I think some people are totally hokey, so I am sorry you ran into someone like that. Maggie is great, because she doesn't make any claims, and you actually sign something acknowledging that she isn't a Dr., that she doesn't diagnose or treat, etc. She actually helps give you the knowledge, but really says that the application is up to you. She has said that people that don't do well on the program are people that read the books and show up to the sessions, but never apply anything. I have found that she has really helped me to be personally accountable for my own wellness. She also doesn't take things away....she adds things in, so it is really a slow pace that people can be comfortable with.
Strength - she does 2 kinds of couseling, either one-on-one or in a small group. I am doing the one-on-one which is awesome because we meet every other week, and on the off-weeks, we check in by email. With that I get a HUGE binder filled with informational reading, tons of recipes, etc. I also get 3 books to read through. When I first started there was a form that I listed all of my symptoms, my personal goals for our time together, etc. There is also a place to list all of the new foods and recipes I try so I can keep track of what I really like. For me, one of my goals was to try at least 20 recipes and at least 10 new foods. I am almost there already and I am on week 4. The recipes are SO good! I am not sure if she takes insurance, and truthfully I am not totally sure what she charges normally because we kind of worked out a trade. The awesome thing is that she does do FREE one-hour consultations so you can decide if it would be right for you.
I will also add that I was a caffeine ADDICT. I no longer have any desire to drink soda because I realize how crappy it makes me feel. I like the taste of coffee, but I have been drinking decaf. Seriously, this is a major breakthrough for me, so that is just one way that this is helping me.
If Maggie isn't the person for you, I hope you are able to find someone to work with! It really can be life-changing.
ETA: I think she charges around $200/month for the one-on-one counseling, and that is meeting in person every other week, and by email or phone as often as needed. Plus it includes all the supplies that I mentioned. I am not sure what the group fee is but that would be less. It is groups of 5 people.
