Foodies/ Health Nuts

I made Quinoa last night for the first time... I used chicken broth instead of water when making it to give it some flavor...  We didn't hate it! I'm hoping to incorporate it more into my rotation of sides for a healthier option...  Does anyone have any great ideas to make it more interesting?

  • I agree, broth does make it better.  I've used beef broth too. 

    I normally just serve it as a side, but I've seen it done up nicely in salads.  I want to say that kaesha has done one on her blog, but I follow a lot of blogs, so who knows!

  • I have to admit, I was terrified of it at first...  But we were pleasantly surprised! A great alternative to rice, for sure!!

  • I use vegetable broth sometimes too.  I like to steam asparagus, chop it into inch-long pieces, and mix it into the quinoa.

  • I have this recipe saved in my email from my aunt....  sorry for the format

    1 tb vegetable oil
    2 cups chopped  white onion
    1 cup chopped red pepper
    1 cup quinoa, rinsed, drained
    2 tsp chili powder
    1/2 tsp cumin
    1/2 tsp salt
    1-1/2 cups water

    1 - 15 oz can black beans, rinsed and drained
    1/2 cup chopped fresh cilantro, dvidied

    Crumbled feta cheese (optional)


    heat oil, add onions and red pepper to saute until soft.....Stir in next 4 ingredients....add water and bring to a boil. Cover and reduce heat to medium and simmer until quinoa is tender about 14 minutes.  Add beans and 1/4 cup cilantro..cook until heated through and liquid is fully absorbed, about three minutes.....Sprinkle with more cilantro and feta cheese.....
