Has anyone put together a benefit?
Two of my co-workers husbands were just diagnosed with cancer (for one this is his second time with it) and my other co-workers and I want to put together a benefit for them but don't really know how to go about it.
Any suggestions would be awesome!!

Yep.
The best way to organize something like this is to make it relevant to something he loves.
#1- Place: Does he have a bar where he's a regular? Or a restaurant? If you can find something about that he has a connection to you're more likely to get free stuff for your event.
#2- Date: Don't do it over a holiday weekend or when something else important in the community is going on.
#3- Market: To people who know him, to people who don't, in the community, through his coworkers and yours.
#4- Fill the Time: Activities are key. Do things that are fun but not too expensive. We had friends do a duck race for their daughter who had cancer at the local community center's lazy river. The center donated admission profits, the ducks were donated from a local store, and then they made money off of the sales. That was really fun, cute, and affordable $5ish a duck, and they win half of the pot (which is almost always donated back). 50/50 auction is the same basic idea, but all you'd need are tickets. Does he love music? Can you book a band who is sympathetic to the cause? What about a photo booth with the guy in question- or people dressed up like the theme of the party who will take photos with you for a few $$.

Last summer one of DH's coworkers was in a bad motorcycle accident and the fire dept threw a benefit for him. They held it at a local restaurant that does Bike Night (so lots of motorcyclists there), had a silent auction for a custom-painted fire helmet, plus a raffle of donated items from around town. They also told t-shirts and a few other things. It went really well.
I definitely would follow Mary's ideas and see if you can make it happen.

Another thing to think about is advertising it. If you book it at a local restaurant or bar (especially bars), ask the owner/manager to contact their beer sales rep about poster advertisement.
I know that Miller will provide free posters advertising benefits for individuals as long as the bar or restaurant sells their product. You just need to provide the info and they will print them for you, the quanitity is different everywhere though. We provide up to 200 copies.
If you want, I can even put together posters and print them for you, then ship them straight to you. Free of charge.
