Sides

I make meals, but I also really like having meat/vegetable/starch kinds of meals on hand when I'm feeling less ambitious.  I'm in a side/starch rut.  Got any good ones for me?

  • I love having sweet potato chips with more casual meals. I just slice sweet potatoes really thin with my mandolin and lay them out on a cookie sheet sprayed with EVOO and then I mist the potatoes with some EVOO and then sprinkle parmesan cheese on them and maybe some cayenne pepper!
  • We eat a ton of those steamer sides by Green Giant or Birdseye. Some have pasta or rice and veggies, others are just a nice combination of seasoned veggies. They're so easy, healthy (usually), and affordable, it's a no brainer. Wal-Mart has a really large selection.

  • We've been doing a lot of wedge salads with the main dishes because it's easier than tossing a salad and everyone can customize what they want on it. I'm also a fan of semi-homemade crusty bread. I use the frozen dough and bake it right before starting the rest of the dinner.

  • We do a lot of the steamer vegetables that Buzz also mentioned. I try on Sunday to make larger sides (9 x13 pan) odpf things that my kids will (hopefully) eat as mini-meals all week. A few favorites are: Green Bean and Rice Casserole, Cheesey Potatoes, Lipton Potatoes, Mashed Potato Layer Bake and Spaghetti Corn. I have the recipes for all these in my cooking blog.   • These do take an hour to bake but prep is really quick.

    Golden Parmesan Potatoes (recipe from an old hometown cookbook)

    5-6 large potatoes, cut up (I cut mine small because I like them crispy)

    1/4 c flour

    1/4 c grated parmesan (I always use fresh, I think it tastes so much better)

    1/3 c butter

    Whatever spices you want to add. I usually do garlic powder and cayenne pepper.

    Melt butter and place in baking pan. Combine flour, parmesan, and spices in a bag. Add potatoes and shake until coated. Pour into pan with butter. Bake at 375 for an hour, turning at least once halfway through.
