I'm embarrased to say I've never made them myself, although I've helped my parents.
Can I make them without using heavy cream? Just milk, butter and season to taste?

TTC Since January 2011 - We have bad spermI've never used heavy cream to make mashed potatoes. I've just always used milk and butter. And I've never measured either. I just add them until they look and taste right. lol
Also, I make them in the mixer, so it's easier to tell when you've got the right amounts in.

I'd bet fat free half and half would make them a little creamier than milk.

This. Except that I usually just use the potato masher, even though I have a Kitchen Aid. I just mash them until they are fluffy, adding milk until it is the consistency I like. I find that while the Kitchen Aid works well, it is easy to overmix and make it gluey. So I end up being about 50/50 on when I use the Kitchen Aid and when I use the masher.

My dad grows red potatoes in the summer (along with a ton of other vegetables...he just planted everything and I can't wait for some fresh veggies!!!) and I LOVE making mashed potatoes out of them...not to mention roasted potatoes

My mashed potatoes are requested in our family. I always use sour cream instead of milk because I usually add too much milk and they get soupy. Then I add butter, salt, pepper, garlic powder, and onion powder to taste.
I like to mix in gouda or pesto for a different taste too.
Yay, they were a success.
I used a mix of Russell and red-skin pototoes (had 3 of each), 1/2 stick butter, bit of milk, 2 cloves garlic and some garlic salt. I hand mashed and then used hand mixer a little. They were delicious!
