Pasta that is bake-able works well, like ziti or lasagna.
Or a Mexican casserole.
I think a roast with veggies and gravy would be good, too, but I usually put potatoes with my roast, and they don't freeze well.

thanks. i guess i should have mentioned that i have a pregnancy aversion to chili and mexican food (anything spicy) which rules out a lot
i already have baked ziti and a meatloaf in the freezer... hmmm.

I've made some recipes from the Freezer Gals (http://freezergals.blogspot.com/) but I don't remember what they were. I do remember I liked them! Some of them, though, you don't cook until after thawing, but it's usually just a matter of thawing and baking/broiling.
Any kind of soup- we portion it out into single servings in ziplock bags and freeze it flat.
Chicken pot pie filling- just defrost and add it to pie shell
Chicken tamales (just freeze before you would heat the cheese)
Stuffed shells
