Mine is chili:

2 big cans of chili beans
1 onion, diced
1 lb. ground turkey (browned)
Red and green bell peppers
Whole, peeled tomatoes
Diced green chiles
Chili powder and cumin to taste

Throw it all in the crock pot and let it sit for a few hours.

  • pasta:

    1 package orchiette

    Saute:

    couple of cloves of garlic, chopped

    pinch of red chili flakes

    1 pound Italian sausage, broken or cut up

    1 bunch Chinese broccoli (this is available here cheap year round, but any tart leaf should work) cut up

    salt and pepper

    1/4 cup sharp cheese (I use Manchego)

    Toss with cooked pasta.


  • Corn Casserole (not heathly, but delicious)

    1/2 cup Butter (melted)

    2 eggs

    1 (8.5 oz) dry corn bread mix

    1 can whole kernal corn (drained)

    1 can creamed corn

    1 cup sour cream

    1. Combine all ingredients. Place in 9 x 9inch baking dish. Bake at 350 for 45 mins to 1 hr

  • Snickers Trifle.. sounds so good!

    1 whole Pan Prepared Brownies (8 Inch By 8 Inch Or Larger)2 packages Instant Chocolate Pudding Mix (Approx 3.5 Oz Each Pkg)4 cups Cold Milk (for Pudding Mix)1 pint Heavy Whipping Cream2 Tablespoons Sugar1 teaspoon Vanilla3 whole Snickers Bars (2 Oz Each)1 jar Caramel Sauce (8 Oz Or Larger) Cut your prepared brownies into about 1 inch chunks (I used about 3/4 of an 8 x 8 inch pan) and set aside.Prepare pudding as directed (combining the powdered mix with the amount of milk specified on the package), and set aside.Beat heavy cream, sugar and vanilla until soft peaks form, then set aside.Chop Snickers bars into small pieces, and set aside.Assemble dessert: Crumble brownies into bottom of trifle bowl to cover surface.Drizzle a few spoonfuls of caramel sauce over the brownie pieces.Spread half of the prepared pudding over brownies and caramel.Spread half of the whipped cream over top of pudding layer.Sprinkle with half of the chopped Snickers.Repeat layering, finishing off with the remaining Snickers chunks.Cover and chill for a few hours before serving. Grilled Chicken over Lemon Pasta with Spinach Chicken Marinade:
    1-2 lbs boneless chicken breast (use leftovers for grilled chicken salad)
    2-3 tablespoons olive oil
    2 teaspoons lemon juice
    1-2 tablespoons Lemon Pepper SeasoningPasta:
    1 lb cooked spaghetti noodles (or other favorite pasta)
    1 bag baby spinach
    1 lemon, zested and juiced
    2 tablespoons butter
    1/2 cup chicken broth or white wine
    2 tablespoons olive oil
    2 large garlic cloves, minced grated Parmesan, for garnishMarinate chicken in a plastic bag for about 20 minutes.  Grill and let sit until pasta is ready.Heat olive oil in medium pan, and slowly saute garlic. Add spinach until it wilts. Next add chicken broth, lemon zest, lemon juice, and butter. Once butter melts, add noodles and heat through. Place pasta on plate and top with chicken.

    All at once spaghetti

    1 lb ground beef, 1 small onion chopped, 2 T oil, 4 little cans tomato sauce (8 oz can), 1/2lb spaghetti, salt and pepper to taste,  3 cups water

    saute onions in oil, add beef til no longer pink, add sauce and water bring to boil, break spaghetti in half and add, simmer with lid on for 20 minutes

  • Mine is mac and cheese, which I only make 1 - 2 times a year since it's so not healthy, but oh so good!

    Ingredients
      • 1/4 cup butter, divided
      • 1/4 cup flour
      • 1 teaspoon salt
      • 2 cups milk ( for a more rich taste use evaporated milk for part of the milk)
      • 1/4 lb Velveeta cheese, cut up
      • 2 cups sharp cheddar cheese, shredded
      • 2 cups elbow macaroni, cooked, drained
      • 2 tablespoons seasoned dry bread crumbs (optional) 
    Directions
    1. Melt 3 tablespoons of the butter in large saucepan on low heat.
    2. Blend in flour and salt; cook and stir 1 minute.
    3. Gradually add milk; cook, stirring constantly, until thickened.
    4. Add prepared cheese product and 1-1/2 cups of the shredded cheese; stir until melted. Stir in macaroni.
    5. Pour into lightly greased 1-1/2-quart casserole.
    6. Melt remaining 1 Tablespoon butter; toss with bread crumbs.
    7. Sprinkle casserole with remaining 1/2 cup cheese and bread crumb mixture.
    8. Bake at 350 degrees F for 20 minutes or until thoroughly heated.
