I'm assuming green in color at St. Patrick's Day is coming up. Though I originally thought "how can you have an environmentally friendly potluck?" Lol. Let me think on this.
Edit: Gosh, that's hard for a potluck. Vegetables are green, but anything cooked is going to be hard to keep warm. Cupcakes with green frosting? You could even put shamrocks on them.

Spinach dip, Heavy on the spinach
Something involving pesto
Roasted veggie skewers with all green and white veggies
Edamane (easy, just buy at TJ's and defrost)
Black bottom cupcakes with the cream cheese part dyed green (my mom did this for halloween several times when she was the "room mom" at school, dying it orange)
Anything topped with an herb...forgetting the word..but you put all the herbs and some olive oil etc in the food processor till you have a smooth mixture, like a pesto but with other herbs. I make a great one to put on grilled marinated skirt steak.
this basil cream cheese spread is really good. serve with baguettes:
1/2 cup chopped basil
2 cloves minced garlic
3/4 cup shredded parmesan cheese
3-8oz blocks of cream cheese
Put all ingredients in a food processor and blend together (I put the basil, garlic and parmesan in first instead of chopping the basil and garlic then I add the cream cheese one block at a time). put contents into a 9x5 pan sprayed with Pam. Chill for at least 2 hours. Invert onto a dish. Serve with Baguettes.

spritz cookies (if you make those)
