I made a nice potroast and mashed potatoes last night.
I kind of want to make these with the leftover potatoes.
I have ravioli for tonight that I will serve with roasted broccolini.
Tomorrow not sure.
Weds I kind of want to do a traditional "boiled dinner" with corned beef, cabbage, potatoes, etc. But not sure I'll have time.
Sunday - Chicken and penne in a vodka sauce with feta cheese (and broccoli for me), caesar salad
Monday - Baked haddock (probably dipped in lemon-butter with Ritz cracker crumbs on top) with rice pilaf & veggie (either salad or carrots)
Tuesday - FFY
Wednesday - Rice crispy coated chicken with rice pilaf & veggie (either salad or carrots)
Thursday - Hot dogs and baked beans
Friday - Chicken and penne in a vodka sauce with feta cheese (and broccoli for me), caesar salad
Saturday - Mom's b-day dinner
Sunday - Sweet & Sour Chicken
Today - Grilled Cheese and Mac N Cheese
Tuesday - left over pasta
Wednesday - some sort of chicken?

I don't typically plan more than a couple of days ahead of time, but here's what I have so far:
Sunday - Homemade Italian wedding soup
Monday - meatloaf, veggies, potatoes
Tuesday - fend for yourself (I have a meeting; knowing B, the boys will have pasta!)
Wednesday - some kind of fish, rice or quinoa, veg

For Thursday, I am putting everything in the crockpot early Thursday morning and then it will be ready when we get home from work!
