does anyone have a recipe for protein bars that are actually good tasting?!
Re: protein bars
I have no recipes (that taste good) other than my kids' granola bars, but I do know that a quality protein bar has more protein content than sugar and that's hard to find. Do watch the ingredients.
If you're looking for a fast, high protein breakfast, you can make mini fritatas and freeze them. Then nuke them for 30 seconds and go. Put whatever you want in them. We do eggs, cheese, onions, peppers, prosciutto...
I also eat the ZONE bars that BP mentioned. We get them at Costco - I think $20 for 24.
YES I DO!!!!
2 cups QUICK oats1 cup natural peanut butter (creamy or chunky)1 cup honey1 cup dark chocolate chips1 cup dried cranberries1 cup MILLED (not ground) flaxseed1 cup vanilla whey protein powderMix all ingredients together and stir until blended. Spread mixture into a 8-by-8-inch pan and refrigerate until ready to serve. Store in refrigerator for 1 to 2 weeks. Yummy, yummy!
FYI- a 2x2 bar has 10 g protein.
These sweet little treats can be made with more protein too. I add flax, protein powder & wheat germ: http://chocolatecoveredkatie.com/2009/10/30/peanut-butter-babies/
This is one I made last week, and it was pretty good!
Almond Power Bars (servings:8-10 slices)
2 cups raw almonds
1/2 cup flaxseed meal
1/2 cup unsweetened coconut
2 scoops flavored whey protein powder
1/2 cup almond butter
1/2 tsp kosher salt
1/2 cup coconut oil
3/4 tsp stevia, to taste ( I use truvia spoonable)
1 tbs pure vanilla
8 squares unsweetened chocolate, melted and sweetened to taste with stevia and cinnamon (optional)
Place almonds, flax meal, shredded coconut, whey powder, almond butter, and salt in a food processor. pulse briefly, about 10 seconds. In a small sauce pan, melt coconut oil over very low heat. Remove coconut oil from stove, stir in stevia and vanilla into oil. Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste. press mixture into an 8X8 glass baking dish. chill in refrigerator for 1 hour.
Melt chocolate, stirring in stevia and cinnamon. Spread melted chocolate over bars. Return to fridge for 30 minutes until chocolate hardens. Remove and cut into bars and serve.
I found that the chocolate on top was not sweet enough for me. I am going to use Hershey's sugar free choc chips next time! I also didn't have almond butter on hand, so I used a natural peanut butter and that worked great!
