Thanks for the tips hawki! I think my cake pops turned out really well. I haven't actually tried one yet, but DH said they were yummy. I'm pretty sure I like the cupcakes better, but it sure was fun playing in the chocolate.
Sorry I couldn't post the pic directly into the post, not sure what I'm doing wrong this morning. Also sorry for the crappy lighting phone pic, but you get the idea.
Happy St. Patrick's Day!

Super cute!
And now I have a dumb (probably Google-able, but I'm lazy and asking here) question -- how the heck do you make a cake pop?
Ha! I'm not sure they would ship very well! Maybe next time!
They're just smushed up cake and frosting that have been dipped in chocolate.
Here's how I did it:
I baked the cake Tuesday night so it would have time to cool. Mixed up a batch of buttercream. Pulsed 1/4 of the cake at a time in the food processor until fine crumbs. Added a glob of frosting (didn't measure at all) and pulsed until combined. Then rolled each batch with into balls and put on a parchment lined pan. After I finished all four batches I stuck my lollipop sticks into them an froze about an hour. (I would never have thought to do this and hawki's tip made such a huge difference.) I then melted the chocolate and pulled ten or so out of the freezer at a time to dip (another hawki tip). Once they were all dipped I melted some white chocolate which I tinted green and drizzled on top. I used tall drinking glasses to stand them in while they set up and then re-froze them for about ten minutes. Put in serving container, wrapped with plastic wrap and kept over night in the refrigerator.
So far everyone where I work and at DH's work potluck have raved about them. I'm still not a fan, as I don't like the texture or sweetness, but they were fun to make so I will probably experiment with other flavors. Sorry this turned out so long, in my world there's really no such thing as a short answer (yes, I know this is annoying to many, but I'm working on it!).
