meal planning/side dishes ideas

I am doing some meal planning for this week and I am coming up short handed with the side dishes.

This week main meal includes fish, chicken sausages, chicken tenders and a pasta dish.

I usually just go with the regular of mixed veggies and/or rice but it is starting to get old.

Any suggestions???

  • I love potatoes so mashed or roasted. If you want more diet friendly, what about a mashed cauliflower?

    You could do a mixture of roasted veggies. Or the roasted broccoli recipe that's been going around (with garlic and crushed red pepper) is really good.

    I also really like couscous. I get the whole wheat kind at TJ's and just a little bit makes a ton. You can add chopped onion or other veggies to it, or just serve plain. I love it with fish.

    Have you tried quinoa before? Another great grain that's really high in protein. You can make it as simple or fancy as you want.

    Sometimes I just love wilting some spinach or other winter greens. You can add a splash of balsamic, some chopped garlic, crushed red pepper, or whatever else you feel like in there.

    I also love this recipe for glazed carrots and turnips.

    Do you guys like, or are you willing to try, Brussel's sprouts? If made correctly, they are so delicious...

    We have tried brussel sprouts and I forgot about them.

    I just remembered about the mashed white beans w/rosemary so that will be another one.

    I am going to pick up some quinoa at Trader Joe's for a change.

  • Whole wheat couscous with sauteed veggies: I usually saute some onions, red peppers, or other aromatics depending on the season and then sprinkle with feta or parmesean.

    Maybe a rice pilaf instead of just plain rice. 

    Beans - maybe spicy black beans or sauteed garbanzo beans.

  • we're not super hot on rice (except for stir-fry or risotto type dishes).

    I do a lot of roasted red potatoes and yams or sweet potatoes. Coucous. I will do a salad instead of a starchy side a lot. I know you love baked potatoes like I do, so I'll throw a couple smaller potatoes or one large one to share in the microwave and we'll eat that. Lots and lots of roasted or stir-fried veggies....green beans, broccoli, snap peas, asparagas, artichokes, etc.

    We get sick of the same things too...maybe I should do rice more often, lol.

    btw...LOVE chicken sausages. =)
