::SM23:: Shakshuka recipe?

Hey there :)  I remember you passing along a shakshuka recipe awhile back and was wondering if you wouldn't mind sharing again?  I made it once a long time ago, and loved it.  I can google for a recipe, but would love your input on a tried & true first.

My childbirth instructor has me on the Bradley diet - 2 eggs a day E.V.E.R.Y. day.  So, I'm looking for some creative ways to eat my eggs.  Egg salad is good, but getting old :P

TIA!

Re: ::SM23:: Shakshuka recipe?

  • Yes ma'am! Here is the recipe I probably shared a few weeks/months ago. I usually add a chopped onion and skip the tomato paste.

    This is a recipe I made this past Sunday and it was really good. Even the picky eaters devoured it.

    The two recipes are very similar except the second has more spice because of the jalapenos. So just a matter of preference how spicy you want them.

    You can add different veggies to the sauce, use crumbled goat or feta cheese on top, or throw in some baby spinach just toward the end of cooking . It's very customizable.

    If you have to eat a lot of eggs, what about frittata?

  • Thank you thank you thank you!

    I've never had/made a frittata...I'll look into that.  :)  Any specific recipes you like?

    I think the one time I did make shakshuka, I had to google a recipe quickly (b/c it was a last minute "do we have all this stuff?" idea after seeing you post it and thinking it looked yummy).  I think I added zucchini and a bunch of other veggies, if I remember right.  I really love this dish.  I'm excited to try this specific recipe you recommended.  Thank you again!!

  • I haven't made frittata in a long time, so I don't have a specific recipe. Sorry!

    No worries!  I'll google.  Or check in with the What's Cooking board maybe.

    Thanks again for the shakshuka info!

  • Butting in to say thanks for the link! I've been wanting to try it and I'm working on my meal plan/shopping list tonight. Stef, homemade quiche is another option if you're looking for more eggy dinner ideas. And there's always good ol' breakfast for dinner (my personal fav)!
