  • Sweet potatoes? Peel, and chop into cubes. Soak for 30-45 minutes in water with some salt and sugar. Drain and dry. Toss lightly with olive oil. Bake. Yum.

    Or roasted regular potatoes. And broccoli. Broccoli goes with everything.

    I've never eaten sweet potatoes and enjoyed them. I know they are healthier for you.... I might give one of these a try. with maple syrup....hmm thats making it sound better.

    That sounds good! I'll try that next time! It sounds really similar to how I prepared our pumpkin (butternut?) ravioli. The guy we bought it from (a guy at the farmers market that looks like Jerry Garcia) said to melt some butter and thow in some chopped sage and a squeeze of maple syrup. OMG, it was so freakin good!

  • OK, this is the sweet potato casserole that my family makes every year for Thanksgiving and Christmas:

    Topping: 1 cup brown sugar, 1/3 cup flour, 1 cup chopped pecans, 1/3 cup melted butter. Mix together until crumbly, and set aside.

    Casserole: 3 cups mashed sweet potatoes, 1/4 cup brown sugar, 1/4 cup maple syrup, 2 eggs (well beaten), 1/4 cup butter, 1/2 cup milk, 1 teaspoon vanilla extract. Mix all casserole ingredients together until smooth and creamy. Place in greased casserole dish and cover with topping. Bake in preheated 350-degree oven for 35-45 minutes, until puffy and golden brown. A knife inserted into the center should come out clean.

    To get the mashed sweet potatoes, boil in water until tender. Drain, peel, and mash. (This is easiest to do when they are hot, but it can be tricky not to burn yourself. I usually use two forks.) My mom claims you should use 3-5 sweet potatoes, but apparently I always buy mammoth sweet potatoes because 3 usually does the trick. If you're unsure, overestimate and buy extra potatoes. If you have too much mash, you can either make extra casserole or save the excess and serve later mixed with butter and maple syrup.
