DH would not go out for ice cream with me last night (grouch) and I was craving something sweet really bad... So I dug out an old Scharffen Berger recipe I found on their website once for "drinking chocolate." It was sooooo good.
The recipe calls for whole milk and unsweetened chocolate. I used 2% milk because that's what I had in the house and it was still super rich. Also used semisweet chocolate chips because that's what I had on hand (and didn't add any extra sugar as called for.) You can leave out the cinnamon and cayenne if you want, but I think they added an awesome flavor. And, you know, top it as indulgently as you want
whipped cream, marshmallows, etc... Great for cold nights. Enjoy!
Classic Drinking Chocolate
(Makes enough for 4 large mugs or 8 small servings)
2 1/2 cups whole milk
4 oz. 99% unsweetened chocolate, coarsely chopped
1/3 cup sugar
1 1/2 tsp. vanilla extract
3/4 tsp. cinnamon (optional)
1/8 tsp. cayenne pepper (optional)
Heat the milk in a medium saucepan on medium-low heat until it is hot to the touch. Whisk in the chocolate and sugar and continue whisking for 1 to 2 minutes until the sugar has dissolved. Whisk in the vanilla and spices, if using. Reduce the heat to low. The chocolate may be made ahead; it will thicken as it sits.
