Menus for the week - and a cheese question.

What's everyone eating this week? I need some inspiration.

Also, I have a huge brick of cheddar cheese to use up. What can I do with it?

  • I made cheddar cheese and black bean quesadillas for lunch =) yum!

    With recent events, I probably won't cook any of this, but here was my plan:

    sun: ragu with pancetta and prosciutto

    mon:chicken boulabaise

    tues: leftovers

    wed: more leftovers

    thurs: bleu cheese and carmalized onion burgers

    fri: out with inlaws

    sat: carmalized onion and pancetta lasagna

  • Quesadillas are a good idea for your cheese or tacos, burritos or enchiladas (cheese enchiladas for you). Also you could make homemade mac and cheese or grilled cheese sandwiches. I also put it on top of tomato based soup (minestrone, for example) or on chili.

    Mon: chicken chili (going to try making it in the crock pot)

    Tues: mac and cheese and minestrone soup

    Wed: beef enchiladas

    Thu: pasta with marinara sauce

    Fri: mushroom chicken with scalloped potatoes

  • I don't have a menu for the week but make mac and cheese!!!  That will use a bunch of it.  Here's one of my favorite recipes

  • Dinners this week will include sweet potato curry with tofu (new recipe I'm trying), rice and black beans with fried plantains, and scramble with tiny gold potatoes, dinosaur kale, and red bell pepper. Last night, I made this butternut squash and caramelized onion galette and it was amazing. I simplified the dough (too impatient to follow all the instructions.) Email me if you want the lazy version. Also, you could sub some of your extra cheddar for the fontina cheese it calls for.

    Another cheese idea: I know this makes me sound like a preschooler but we regularly eat grilled cheese sandwiches with slices of pear and apple in it for dinner, usually with a side salad. It's what I make when I don't really feel like cooking.

  • I'm in a rush and don't have time to list the recipe ideas... but, just fyi... did you know you can freeze cheese? The only thing is that when it defrosts, it is a little more crumbly in texture rather than smooth, so it doesn't make good sliced cheese. It DOES make great melted cheese. :) I've frozen my big blocks of cheddar many times. :)

    We're having quesadillas this week for sure - great use for your cheese. Some chicken, black beans, green chilis...yum. A little pico de gallo and you've got a fab dinner.

    Also, we usually then get some refried beans and do a variation as burritos as well with pretty much the same stuff.

  • Mmmm...cheese...

    How about a cheesy veggie quiche or frittata? Or some cheddar-broccoli soup? Oh how I wish could make some of these fabulous cheesy recipes - DH doesn't do dairy so I have to wait until he's OOT to make all my favorite cheesy dinners.

    Last night we had grilled steelhead with polenta and roasted brussels sprouts (delish!). On the meal plan for the rest of the week are turkey meatloaf with mashed cauliflower and PW's buttered rosemary rolls, crockpot split pea & smoked turkey soup with bread, steamed veggies over brown rice with feta, olive oil and lemon juice (my favorite quick & healthy weeknight meal), and turkey chili with roasted carrots. Not super helpful for you I realize, but all except the meatloaf can be made veggie by just leaving out the turkey.

    OMG...the girls at my GTG had an awesome grilled cheese sandwiches. They had one with bacon and tomato with all different types of cheeses. That sounds good now.
