"Recipe" rave (hot chocolate)

DH would not go out for ice cream with me last night (grouch) and I was craving something sweet really bad... So I dug out an old Scharffen Berger recipe I found on their website once for "drinking chocolate." It was sooooo good.

The recipe calls for whole milk and unsweetened chocolate. I used 2% milk because that's what I had in the house and it was still super rich. Also used semisweet chocolate chips because that's what I had on hand (and didn't add any extra sugar as called for.) You can leave out the cinnamon and cayenne if you want, but I think they added an awesome flavor. And, you know, top it as indulgently as you want  :)  whipped cream, marshmallows, etc... Great for cold nights. Enjoy!

Classic Drinking Chocolate

(Makes enough for 4 large mugs or 8 small servings)

2 1/2 cups whole milk

4 oz. 99% unsweetened chocolate, coarsely chopped

1/3 cup sugar

1 1/2 tsp. vanilla extract

3/4 tsp. cinnamon (optional)

1/8 tsp. cayenne pepper (optional)

Heat the milk in a medium saucepan on medium-low heat until it is hot to the touch. Whisk in the chocolate and sugar and continue whisking for 1 to 2 minutes until the sugar has dissolved. Whisk in the vanilla and spices, if using. Reduce the heat to low. The chocolate may be made ahead; it will thicken as it sits.
