The downside about going OOT for the weekend and no grocery list to give to DH is that you have to be creative and that is what it will be for Mon, Tues, and Wed. I will go grocery shopping on Thursday morning.

Homemade green monster smoothie and popcorn...
Dh is at the Giants game so I am being lazy
Stouffer's frozen Homestyle Beef skillet meal, mashed potatoes, and toasted bread. Not exciting but I have Bible study tonight so I need something quick and no fuss on Monday nights. H doesn't mind because he'll eat just about anything.
Tomorrow night I'm making a delicious pasta dish. It's pretty much pasta, turkey Italian sausage, and veggies (I use tomatoes, snow peas, cucumber, and a bell pepper) with EVOO and fresh garlic.I cook the sausage first then I cook the garlic in the EVOO for a few minutes, cook the veggies for a few minutes in the EVOO and garlic, and then toss it all with pasta (the heat of the pasta "cooks" the veggies as well). Super easy and yummy! Makes GREAT left overs.
