Dinner help

I am attempting to make manicotti for the 1st time tonight. Can you all give me any tips? I plan to make a chesse filling and meat sauce for the top and of course cover it in cheese.

  • I love, love, love manicotti! Here's how I do it. I don't really have any measurements for ingredients though, I just kind of wing it.

    Boil the noodles until they are soft, but still kind of firm. Drain them. In a bowl, mix together ricotta cheese, mozzerella cheese, an egg, and any seasoning you'd like (I usually use an italian seasoning). Stuff each noodle with the cheese mixture (I found using a butter knife is easiest.) some of the noodles will probably tear, just do the best you can, once it's covered in sauce you won't even be able to tell that the noodles are torn. In a casserole type dish, cover the bottom with sauce and then place the noodles in the dish. Then cover the noodles with sauce and then cheese. Then bake it until the cheese melts. It's really good if you add some warmed up alfredo sauce on top after it's done baking.

    This is pretty much exactly how I make manicotti.  I've never tried alfredo on top, just mozzarella cheese.  So good!

  • Thanks everyone. It wasn't as hard to make as I thought it would be. I plan to play around with it some more too. I am going to have to try the alfredo on top next time too.
