MrsReem's "baked mommy mac & cheese"
Has anyone made this? I was reading the recipe and it seems like 8 oz (1/2 box) of noodles isn't very much for how much other stuff you are adding.. so this morning I boiled a box of noodles and HOLY crap 16 oz of elbow mac is a LOT! Is 1/2 box really correct? If so, anyone have a good recipe for mac & cheese using a whole box of noodles? Obviously I can double her recipe but 2 bags of cheese and 2 containers of sour cream seems like overkill (although I'm sure if I froze it after I baked it, it would make delish leftovers!)

I've made it before, and I actually made a half batch for my family as I knew we'd never eat a 9x13 pan. You can refrigerate cooked noodles for about a week, and use the leftover noodles in some other dish. I'm not sure how well it freezes, as sour cream doesn't usually freeze well, but someone else may be able to speak better to that, as I've never actually tried it!
It is a yummy concoction if you get to try it though!
You can use the whole box of noodles if you want to with the same measurements of everything else if you like. Just bake in two pans instead of one and double the topping. You don't want to skimp on topping.
The original recipe is just richer than what you'll get with more noodles.
Also if you make two pans, it freezes and reheats exceptionally well. You could also make a batch of noodles and alfredo with the extra or make a separate baked ziti (with macaroni instead) to freeze.
