I'm not a big fan of Easter for a number of reasons (a main one being that I'm not religious). Another reason has to do with the fact that DH's family likes to eat at 6 or 7pm on Easter Sunday. That would be fine if I didn't have to drive 3 hours home after dinner is over and then go to work the next day.
So this year I had a great idea. I said that I was going to host Easter dinner at our house in NY. I knew that my BIL and his family would not come as they have to see their other side of the family. I assumed that my ILs would not come as they would rather see the grandkids (I'm reminded by them often that holidays are only about children). My ILs have not been to our house since our wedding, so why would they come now, right? Oh yeah, the ILs are COMING. Ugh. I totally thought this meant that I was just going to have a normal Sunday with Dh but now I have to cook dinner. Epic fail on my part.

I already fear which holiday I'm going to get stuck with...though I opted for Easter, since most people in my family don't care/do their own thing.
DH and I just mentioned we were going to consider starting the house buying process this year. And what happens? The first time I see my aunt/uncle/grandparents, they all say "Oh, so you're hosting Thanksgiving this year, right?"
Ummmm, we haven't even finished getting our down payment together, nor have we started the pre-qual loan process. And you've already got me hosting THANKSGIVING?!?! SERIOUSLY?!?!
If I were in your shoes, I'd just make a simple dinner. If they don't like it (it's not "Easter-y" enough), then they won't come next year.
DH is planning to cook and I'm actually a little excited to make some Easter crafts and whip out the china which we don't use enough. It was just a bit of a shock that my plan failed so badly!
Thank goodness my family does the whole "let's go out to brunch" thing for Easter. Even if they have told me the wrong time (and seriously pi$$ed me off........twice), it's better than some big dinner at my house.
Though the one year we had it at my parent's new house and Mom provided those cheap, plastic kites for all the kids was pretty rockin'. I'd be up for that again this year especially since Easter is so late and we might have a snowball's chance to have decent weather. Might.
