all next week? and lunch? :)

This is my second day in a row buying breakfast & lunch. planning fail this week. We want to make two casserole type things on Sunday to last us for lunches, and need dinners for S-W and F (thurs we'll get something out due to rugby and Sat we (well at least I) will eat at my game). I need inspiration, as lasagna, fajitas, etc are getting boring.

  • I haven't done next week's list yet; should get the other grocery store flier in the mail today. I usually base my meals around what's on sale.

    This week fresh mozzarella was on sale so I made mozzarella stuffed meatballs and we had that for 2 nights. We also got pizza dough and make little pizzas with the mozzarella two nights as well. We have quesadillas/tacos last night. I had planned for hot dogs Saturday.

    For casseroles (ish)  there's always the cheesey chicken and rice type dishes, baked ziti, enchiladas, chicken pot pie. We also like this recipe and I imagine it would be good for lunch too.

    For lunch it is usually a sandwich (lunch meat, tuna, pbj), pasta, or soup (sometime with a grilled cheese). Occasionally leftovers from a restaurant or dinner.

  • I know Lemony Squash zucchini pizza (I like goat cheese, but M does not, but is equally as good with tomato sauce) I have a whole wheat pizza dough recipe that is amazing. Also salad.

    Our farmers market opens this weekend! I will probably go with whatever veggies I find there. Maybe a veggie lasagna? Grilled chicken + veggies & salads from fm??

    Also, planing a Trader Joes trip this weekend to get artichokes for an artichoke sun dried tomato pasta dish.

    And I just looked at what I typed, I think I need help. Someone give me ideas other that pizza and pasta, geeze. No wonder my diets lacking. I'm start the green monster smoothies tomorrow....

  • We do a lot of pizza & pasta too. I eat meat, poultry, etc (and fish but C doesnt like it) but only if its in something not as the main attraction (aside from the occassional burger and annual filet mignon)...

    That looks wonderful!  I might have to pick up some orzo and try that sometime soon.

    I just made a good crock pot dinner the other day.

    Chicken and Dumplings

    chicken breasts (I used 2)
    2 cans cream of chicken soup (I used 1 cream of chicken, 1 cream of celery)
    1 bag frozen mixed veggies
    1 carton chicken stock (should only need about 1/2-3/4)
    1 can refrigerated biscuits

    Put the chicken on bottom of crock pot, add soups and mixed veggies.  Pour enough chicken stock to cover.  Cook 7-8 hours on low or 4-5 hours on high.  Shred the chicken.  Tear the biscuits into pieces, drop on top.  Cook on high 30-60 minutes.

  • Haven't planned for next week yet. Tonight is leftover so our choices are pioneer womans sloppy joes, chicken taco soup or buff chick macncheese. Ill let you know what I come up with for next week.
  • We never plan it out :( Truthfully, we're rarely together for dinner so we don't cook very often. I eat cereal a lot.

    For lunches, I eat lean cuisine or smart ones or some other various frozen thing. For breakfast I eat the same thing every day: sandwich thin + eggbeaters + american cheese slice = breakfast sandwich.

    Clearly, I suck at the housewife thing.

  • Hmmm, well tonight is Thai delivery.....here's the plan for next week.  Lunches tend to be leftovers from "larger" meals.  We also have some soup in the freezer that I will probably pull out.  We'll have 2 extra pizzas and 2 extra pasta dishes for leftovers.  Also a standing lunch date on Fridays. 

    This week is really chicken heavy because we had a huge grocery trip for the party we're throwing tomorrow.  I didn't want to spend a bunch of $$ on fish this week.
