What meal goes with chips & guac?
I bought avocados to make guacamole.. originally it was going to be for a snack but now the avocados are super ripe and I think I need to use them for dinner tonight.
The question is, what goes with chips & guac? I was thinking of making quesadillas, but I wasn't sure if that is too much carb (tortilla chips with the guac and then tortillas for the quesadillas). Does it need to be Mexican food?

Anything grilled could be a good match also. Maybe some tequila lime chicken or a lean piece of steak.
I would make tacos or quesadillas, but it sounds like you don't want a carb overload!! LOL.
Also, you could make a beautiful salad and add in the fresh avocado. Avocado is also delish to spread on a nice sandwich.
