What's cooking for tonight ? Anything good ? What's coming up for dinner this week ladies ? Inspire me ! I've been seeing some strawberries, and am getting sooo excited for summer fruit !!
Re: Sunday baking/cooking
We're going to a barbecue this afternoon and I'll be bringing my tofu kebobs. Tofu cubes marinated in half teriyaki and half tamari, with pineapple, red onion, maybe some tomatoes.
Also, I got some green garlic at the farmers market, so am going to make this green garlic risotto. And I got the most gorgeous fennel there too (seriously, I love beautiful vegetables. They're like art.) so will probably make a potato/fennel bake.
Let's see this is what I made the past 3 days:
-broccoli casserole
-mexican chicken lasagna
-salsa chicken
-buffalo chicken mac n cheese
-vanilla bean ice cream
What kind of tofu do you use for these kebabs - firm, extra firm? Sounds like something I should try next time we barbecue. I love grilled pineapple too.
Last night I made Chicken Milanese http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=10000001981729
with Creamy Parmesan Orzo

Both really good cooking light recipes.
Later today I am going to make strawberry milkshakes, and we'll be having breakfast for dinner tonight: with eggs from our backyard hens, sausage and toast.
I made chocolate and strawberry cake pops. They're from this recipe for "cake truffles": I just stuck a lollipop stick in each one.
SO DELICIOUS. I have about 40 leftover ... come pick them up if you want one!
