Coconut Chicken with dijon apricot sauce. B would rather slit his wrists then have coconut and apricot on his dinner (he's dramatic not me) but I wanted this and made it anyway. He looovered it. He claimed the leftovers for his lunch, we'll see about that. and it was super easy.
